The Wickenburg Sun, Wickenburg, AZ October 13, 2004, p. B7 Flavia "Vita" R. Strephans, 91, passed away on Oct. 5, 2004 at her home in Wickenburg. Flavia was born in Rosario, Mexico, in 1912. In 1923, the Rodriguez family settled in Bisbee, Ariz. Flavia spent her school years there and was married to Charles Strephans in 1936. She spent her working years as a waitress, cook and restaurant owner. In 1941, Flavia came with her family to Wickenburg, where she and her husband ran the Texas Café during World War II. In 1951, she and her husband opened Charles Steak House. After her husband passed away in 1968, she changed the restaurant to Vita's Mexican Food. It became the first successful Mexican restaurant in the area. Her two sons, Charles and Robert Strephans, both of Wickenburg, eight grandchildren, 18 great-grandchildren, and 10 great-great-grandchildren, survive her. The family requests donations be made to the American Diabetes Association in her honor. Father John Vogt presided over graveside services at Wickenburg Cemetery on Oct. 8.
